Description

Lobster is a member of the crustaceans, which is more similar to Nephropidae than to Brachyura. Lobster is valuable seafood that is not served by people ordinarily but on special occasions.

Despite its current reputation and expensiveness, this food has not always been known with high prices. In the seventeenth century, the Colonizers in Massachusetts considered the presence of lobster shells in a house as a sign of poverty.

Lobster nutritional value

According to the National Nutrient Database of the United States Department of Agriculture (USDA), a cup of cooked lobster with an approximate weight of 145 grams contains:

- 129 calories

- 1.25 grams fat

- 0 gram carbohydrate

- 27.55 grams protein

Moreover, this amount of lobster contains 3% of vitamin A, 9% of calcium, and 3% of the iron an individual daily needs.

Lobster is a rich source of copper and selenium; it also contains zinc, phosphorous, vitamin B12, vitamin E, a small amount of omega 3 fatty acids.

Lobster contains lipids, but it is not a considerable source of saturated lipids; instead, it is a rich source of unsaturated fatty acids, which are beneficial to the human body. Polyunsaturated fat could help decrease cholesterol levels and the risk for cardiovascular disease.

Lobster properties

- Omega 3 fatty acids in lobster could decrease blood cholesterol levels. Omega 3 fatty acids could also decrease aggression, impulsivity, and depression.

- Similar to other fish, consuming lobster could increase good cholesterol, in addition to decreasing the risk of obesity, diabetes, and other cardiovascular diseases.

- Similar to other fish, consuming lobster is very important in providing the necessary omega 3 fatty acids, which are found in few foods. Although lobsters do not have the highest amount of fatty acid compared to fish and scallops, they are still a significant resource for this important nutrient.

- Lobster is a good resource for selenium; selenium is an essential element in the healthy function of the thyroid. This nutrient acts as an antioxidant and helps the thyroid to absorb and metabolize hormones.

Selenium deficiency in children is also probably an environmental factor for hyperactivity. Ensuring that the child is receiving enough selenium could help reduce the risk of ADHD.

- Lobster is one of the best foods rich in copper. Together with iron, copper forms red blood cells. Anemia develops when red blood cells do not have enough blood or red blood cells do not work efficiently. Consuming adequate copper is essential for individuals with anemia.

Who is recommended to consume lobster?

As already mentioned, the properties of lobster are mainly suitable for individuals with thyroid diseases, anemia, diabetes, cardiovascular diseases, and obesity.

Different types of lobster

Lobsters are crustaceans categorized into four main types: clawed, spiny, slipper, and deep sea.  Among the four types, clawed and spiny have the highest orders in restaurants.

- South African lobster is rose-colored, lives in cold water, and grows slowly.

Australian lobster is hunted in Western and Northern Australia and is said to have one of the most pleasing tastes. The tail of this lobster, which is sweet in taste, is firm and solid.

Brazilian lobster is obtained from Brazil warm waters and has a sweet and exclusive taste. In addition, this type of lobster is associated with being tender.

- New Zealand lobster lives in cold waters and has a strange taste. With its sweet taste, this type of lobster has a red crust. New Zealand exports almost all of its lobster to China and Japan.

- Caribbean lobster lives in the Caribbean warm waters close to the Gulf of Mexico. The meat of this lobster is slightly firm; however, it has a good taste.

Lobster habitat

Different marine lobsters live in warm and cold waters. Therefore, you can find them on any shore. America, Canada, Southern Africa, Australia, Brazil, and New Zealand are known regions for farming and hunting lobsters; however, you can find lobsters wherever there is an ocean. This marine creature could be found on the Caspian coast, Aras Dam Lake, and Anzali Lagoon in Iran.

Lobster peeling methods

Lobster is typically placed in boiling water and cooked as a whole, and its meat should be separated at the time of serving. There are many methods for peeling lobster, some of which are explained in the following.

- Turn the claws or twist them backward so to stick them together. If you have a hard-shell lobster, break the tip of claws using a nutcracker or the back of a heavy knife. Remove the lobster meat from the section just created.

- The knuckles between the claw and the body are tiny, but the meat inside them is very delicious. Break these knuckles and open them using a nutcracker.

- The black vein passing below the tail contains lobster's waste. Grab its skin or cut it and throw it away.

- If you wish to eat all of the lobster meat, press on the lobster's legs using a rolling pin to remove the skin. Or, you can put the end of each leg in your mouth, and while sucking the meat, take it down using your teeth.

Lobster cooking methods

Fill 3/4 of the pot with water. Add a spoon of salt for each 1/4 water. The water must be salty like seawater (in fact, if accessible, you can use clean sear water as well); boil the water rapidly.

Place the lobster with its head first in the boiling water. Close the pot lid and let it boil for 20 minutes.

- Consider that larger lobster turns red before being fully cooked. Therefore, you have to adjust the time necessary for cooking so that all lobsters cook equally.

- Bring out the lobster using a plier and place it on the plate to dry and cool.

Identifying a healthy lobster

Consider the following points to identify a healthy lobster:

- Are the lobster claws curved? This shows low-quality lobster meat.

Test the tail; first press it and then straighten it. If it does not make a circle again, it is not a good choice to buy.

- Carefully examine the horns of lobster. The absence of horns or chewed horns shows that the lobster has been in storage for quite a long time.
